One of my personal favorites is Elantris. It's stand-alone, relatively short, and I love the magic system.
The other two I'd advise starting out with are Warbreaker or The Emperor's Soul.
If you love huge series and don't mind jumping into an incomplete, sprawling universe, The Way of Kings just might be your jam. Its scope is at least as wide as the WoT series and is some of his most polished writing to date.
Way of Kings is also incredible. When I first started reading it in 2010 I was confused and thought it was super weird but I just couldn't put it down. Now I'm hooked!

This! I recommend Warbreaker a lot because it's standalone and half the people asking me find the whole Cosmere idea intimidating when they're first diving in.
