Recently, I watched the Mandalorian week by week and the Witcher in a binge. Now I definitely prefer week-to-week because even though I want more of both, I think I'm craving more of the Witcher universe since it ended so quickly.

I'd prefer week to week. You get a larger sense of suspense, more time to discuss individual episodes with other fans, and a lower chance of spoilers if you're not able to watch every episode quickly.
