I'd love to see the scene where Rand climbs Dragonmount, pulls as much or more saidin than he could possibly handle and actually considering breaking the world again but then realizes love is a reason to fight. That made me cry and would be such an epic scene in a movie.
I would probably have to say the time when the Horn of Valere was blown.
I would love to see some of the first scenes from The Eye of the World in video form, but especially the scene with the Trollocs on the farm. Also, any scene in Shadar Logoth or Rhuidean, which are, in my opinion, the two cities that would look the coolest either in a picture or video.
I think those tow would be my votes as well - Egwene defending the Tower with the Novice circle and Perrin defending the Two Rivers.

Egwene and the Seanchan raid of the Tower,she had warned everyone and the hadn't believed her...
Rand's and Cadsuane's first meeting,I don't need to say something about this scene...
Tylin and Mat,all their scenes were hilarious
when Nynaeve got drunk
When MAt blew the Horn of Valere,epic!

Im pretty wierd( understatement. 
) But one simple scene is the very opening in the Eye of the World. Rand walking with the wagon and Tam and seeing the fade. Its simple, yet spooky..
And also in the Eye of the World Id Love to see the Initial attack on Emonds Field. With Lan and Moirane helping defend the village.
Lastly at Shador Logoth , id LOVE to see the scene where the companions Rush through the trolloc lines to gain entry to the ruins and Mat is yelling in the Old tonguie!!!! Heck Yeah!!

I love this question! I think the tests for Accepted and Aes Sedai would be fascinating to watch, and incredibly powerful. Dumai's Wells, especially the aftermath. Egwene in Elaida's tower.

"Rand that fell in the private garden in the royal palace of Caemlyn"
"The face of Rand when he found out that three beautiful women will love him"
"The epicness of the first meeting between Rand and Siuan Sanche"
"When Rand show his arm with the dragons on them"
but I think that visualize them with the eyes of our mind is the best thing!

3. Battle for Cairhien (Mat dispersing the Shaido)

5. Mat retaking command of The Band and crushing the army sent to kill Tuon.
6. Pretty much every scene with Mat from Lord of Chaos through end of series. (Love the humor he injects into the series. I wish I could be just like him LOL)
7. Cleansing of Saidin.
8. Rand repelling the attack on the cabin retreat using deathgates for the first time.
9. The Dragonball Z-like fighting between Perrin and Slayer in TAR.
10. Perrin's Assault on Malden. (Loved Galina being found again by Therava )
