I live near Kennett Square, which is apparently the Mushroom Capital of the world, and they sell mushroom ice cream. My dad has never been able to convince me to try it Carrot ice cream might be better, though?

I once ate a cake with carrots and white chocolate. I think it tastes better than it sounds.

Actually, that doesn't sound bad... Very appropriate for spring, I guess?
It's closed down now, but there was a restaurant near me that used to sell a different weird flavor ice cream every year in April Fools. I remember one year they had sauerkraut, another year, succotash.

I don't think carrot ice cream would be all that strange. Glass carrots are a thing, and those are nothing but candied carrots. Besides, carrots themselves are slightly sweet, and would lend themselves well. You'd also get a lovely orange color for your trouble!

I didnt know marshmallows have a different taste when Kosher.
I only ever ate the Kosher ones and thought thats how marshmallows always taste.
